Designs & Executes Signature Menus: Develops multi-course tasting journeys that reflect his hallmark lightness and seasonal focus, translating local Hawaiian produce through refined French technique.
Leads On-Site Culinary Production: Oversees every element of preparation and plating during events, ensuring Michelin-level precision and consistency from the first amuse-bouche to the final petit four.
Collaborates with Elite Chefs: Works side-by-side with our Council to harmonize diverse culinary voices and guarantee a seamless, cohesive dining narrative.
Engages Guests Directly: Shares the story behind each dish in intimate kitchen-to-table interactions, elevating the guest experience through personal insights into technique, ingredient selection, and flavour layering.
